Pumpkin Smoothie Bowl

November 29, 2018 by Gina +

Fall flew by but that doesn't mean we have to say farewell to one of the best parts of it, pumpkin!  Aside from how delicious most pumpkin spiced things are, it's hugely beneficial for our bodies.  Its loaded with fiber and betacarotene.  Pumpkin is also great for the immune system, which is perfect for this time of the year. Buffalo Cauliflower Tacos

November 8, 2018 by Gina +

Tortillas, cauliflower, and hot sauce; all the makings for something delicious.  When I did eat meat, I was never a 'wing' person.  To be honest, I probably only had them once or twice.  But I do love hot sauce, and the idea of baking the current most versatile vegetable in a kicking sauce, then chucking it into a taco, well I am 'that kind' of person.  Made with simple and clean ingredients with

Pumpkin Spice Muffins

November 5, 2018 by Gina +

These muffins are perfect for fall.  Filled with pumpkin and all the right spices.  They are super fluffy too, just like a bakery muffin.  Though they are best right out of the oven, they heat up nicely and get back their bounce and fluff.  I like them plain but a little drizzle of nut butter takes them to another level.  And trust me on warm, that's how you have to eat them.  You could go cold,

Roast Veggie Bowl with Miso Tahini Dressing

October 31, 2018 by Gina +

Fall and the holidays are one of my favorite times of the year . I love everything about about it except that time seems to go by way too fast.  Most likely due to more social obligations and shorter days, but I feel as though I blink, and it's all over.  I found myself short on time for cooking dinner after a busy weekend of going out and entertaining.  Rather than throw in a

Meal Plan 1 with a Fig, Banana, Cauliflower Smoothie

October 26, 2018 by Gina +

Here's a look at my meal plan for this week.  I find that sitting down on Sunday, looking at my plans for the week (workouts, hangouts, work), helps me make a realistic plan for the week.  Having a plan allows me to purchase just what I'll need  while alleviating the anxiety of what to have for the week.  It's not perfect, and I sometimes have to adjust during the week, but it's the method that

A dinner you don’t want to miss. I cut a hole st A dinner you don’t want to miss.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in — meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it — no sliding eggs, no mess.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel
