Creamy One-Pot Sausage and Kale Pasta

December 9, 2022 by Gina +

This will be a new go-to dinner, I promise. It’s creamy, made in one pot, and hearty with sausage and pasta but also healthy with kale!

A big dish of creamy sausage and kale pasta. A small bowl of parmesan cheese to the side and a wooden serving spoon to the other side.

This creamy one-pot sausage and kale pasta is always a hit in our house. The kids don’t even mind the green! That’s a total win for us since (our) toddlers seem to be totally adverse to kale, spinach, and other greens. I think the flavor with the creamy parmesan sauce and sausage is the winning combo here.

I see one-pot pasta recipes but they aren’t ones I make often. But every time I make this I wonder why I don’t make them more. I love cooking pasta with broth, onions, and other seasonings. It makes for such a flavorful and creamy pasta.

Ingredients needed for Sausage kale pasta

  • Sausage – I like using ground Italian sausage
  • Onion
  • Garlic
  • Pasta – I like fusilli
  • Chicken stock
  • Cream
  • Parmesan
  • Kale
  • Salt & pepper

How to make Creamy one-pot sausage kale pasta

  • Start by cooking the sausage in a large pot (love this set) and trying it break it down into smaller pieces. Remove from the large pan and set aside.
  • In the same pan, cook the onion and garlic then add the kale.
  • Pour in the broth and pasta and boil.
  • Once it’s cooked, add the cream, parm, and sausage.

Tips for the creamy pasta

  • This meal is super easy and made in one pot but you can do a couple of things to prep ahead:
  • One is to the sausage prior. You can also cut your onion when you do any meal prepping.
  • Since you are not pouring the liquid out, the pasta needs to be stirred while you cook it. Make sure to give it attention and stir it around so it all gets cooked.

This tasted fabulous. My husband went back for his second and third bowl full. I did need to add a little bit of water to cover the noodles. I also added some cherry tomatoes. Will make this one again.
