Creamy Sausage Pasta

This Creamy sausage pasta is one of our absolute favorite dinners.

The kids love it because most kids love pasta. And we love it because it’s got lots of delicious Italian sausage and a ton of veggies that blend right in. I love vegetables but it’s always a gamble with the kids so it’s nice that they just eat them right up. Plus this is all made in one pot. Always love that.

When I first made this recipe I thought it was going to be more of a sausage and vegetable soup with some pasta. But as I cooked it, it turned into this delicious creamy Italian sausage pasta. And everyone was very pleased with the results.

For the base, this creamy sausage pasta starts with browning some Italian sausage. You can use spicy, mild, or whatever you prefer. I use mild so it’s more kid-friendly. Remove the sausage, then in the same pot add your onion, celery, and carrot. This little pasta punches with lots of veggies but you honestly can’t really tell which I think a lot of parents appreciate. Then we add some diced tomatoes, seasoning, broth and pasta. This is one of the best parts. The pasta cooks right there with everything so there is no extra step of boiling it separately. Then stir in some heavy cream and a little parmesan plus the spinach and cook just until the spinach wilts, a couple of minutes.

Ingredients


  • Italian sausage
  • Diced onion
  • Diced carrots
  • Diced celery
  • Minced garlic
  • Tomato paste
  • Diced, canned tomatoes,
  • Pasta, I like using bowtie
  • Broth
  • Heavy cream
  • Grate parmesan
  • Spinach

How to make creamy sausage pasta


  • In a large pan, brown the sausage breaking is apart as much as you can. After about 10 minutes, remove from the pan. Don’t clean the pan.
  • Add a little oil then saute the onion, celery, and carrot with some salt for about 5 minutes. Add th garlic, seasoning, and tomato paste. Cook down for a minute.
  • Pour in the broth, diced tomatoes, and pasta. Stir, bring to a boil, then lower heat to medium / low and cook for another 10 minutes. Stir occasionally to make sure the pasta moves and gets covered by liquid.
  • When it’s all done cooking, turn the heat to low, and mix in the heavy cream, some parmesan, and spinach. Cook for just a couple of minutes until the spinach wilts.
  • Serve and enjoy.

Tips and common questions for the pasta recipe


  • This pasta is great for meal prep and can easily be made ahead. Just reheat and add a little more parm and or broth if you want.
  • I use onion, carrot, and celery, but tomatoes, zucchini, or other vegetables would be great too.
  • Since we aren’t boiling the pasta, make sure to stir and keep the pasta covered with liquid so it cooks properly.
  • Can I skip the sausage to make it meat free? Absolutely. Use a meat-free alternative or skip it altogether.
  • Is the heavy cream necessary? I love the creaminess it adds and the recipe only calls for half an of cup. You can however skip but it won’t have the creaminess. I have yet to test any alternatives.

Ingredients
  

  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 2 carrots, diced
  • 3 celery ribs, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • 8 oz pasta I like bow ties for fun
  • 1/4 cup heavy cream add more if you want it richer and creamier
  • 5 oz baby spinach
  • ½ cup parmesan More for topping

Method
 

  1. Brown the sausage in a large pot for about 8-10 minutes. Remove
  2. In that same pot, cook the veggies, onion, carrot, and celery for about 7 minutes. Add the garlic for 30 seconds. Then add the tomato paste, coat the veggies, then add the italian seasoning with a good pinch of salt.
  3. Stir in the tomatoes then the broth and pasta. Bring to a boil then simmer for about 8-10 minutes. Stir frequently to make sure the pasta gets pushed down and cooked.
  4. After it's all cooked, stir through the cream, parm, and spinach. It's all done when the spinach is wilted. Adjust seasoning if needed. Enjoy!

The first recipe in my Summer Side Dish Series is The first recipe in my Summer Side Dish Series is this creamy herby potato salad, and it’s going to be on repeat all season long.

It’s everything I want in a potato salad—tender potatoes, crispy bacon, fresh herbs, a creamy Greek yogurt dressing, and just enough mayo to keep it tasting like the classic version we all grew up with.

2 pounds baby Yukon gold potatoes, halved if large
1 tablespoon pickle brine or white wine vinegar
1 tablespoon Dijon mustard
3/4 cup plain Greek yogurt
1/4 cup mayonnaise
1 garlic clove, grated
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
4 slices bacon, cooked crispy and crumbled
3 green onions, thinly sliced
1/4 cup chopped fresh chives
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
1 celery rib, finely diced

Place potatoes in a large pot and cover with cold water. Season generously with salt. Bring to a boil and cook until fork tender, about 12-15 minutes.

Drain well and spread onto a baking sheet.

While still warm, toss potatoes with the pickle brine and Dijon mustard. Let cool for about 10 minutes.

In a large bowl whisk together Greek yogurt, mayonnaise, garlic, lemon juice, salt, and pepper.

Add potatoes, bacon, celery, green onions, chives, parsley, and dill. Toss gently until coated.

Refrigerate at least 30 minutes before serving.

Finish with extra herbs and bacon right before serving.

Save this one for your next BBQ, picnic, or weeknight dinner. ☀️🥔

For this combination, here’s what I did:
Butter sourdough then grill on skillet. Add a layer of spread, I used mayo. Top with prosciutto then salami and turkey if you want. Arugula, balsamic glaze, and hot honey. Top with a ball of prosciutto.

They’re soft, fluffy, naturally sweetened with ripe bananas and maple syrup, and loaded with mini chocolate chips. I love having these on hand for those endless summer snack requests.

Made with ripe bananas, Greek yogurt, maple syrup, egg, vanilla, oil, flour, cinnamon, baking soda, baking powder, salt, and mini chocolate chips.

I blended 1/2 cup cottage cheese with 1 egg, a little Italian seasoning and garlic powder, then spread it onto parchment paper. I topped it with turkey pepperoni and baked it until golden and set.

Once it cooled slightly, I stuffed it with a chopped Caesar salad and folded it up like a wrap. The result is crispy, cheesy, packed with protein, and one of my favorite lunches lately.

1/2 cup @good_culture cottage cheese
1 large egg
1/2 teaspoon Italian seasoning
Pinch garlic powder
Turkey pepperoni
Chopped romaine
Caesar dressing
Fresh Parmesan

Instructions:
Blend the cottage cheese, egg, Italian seasoning, and garlic powder until smooth. Spread onto a parchment-lined baking sheet and top with turkey pepperoni. Bake at 400°F for 18-22 minutes or until set and lightly golden. Let cool for a few minutes. Toss chopped romaine with Caesar dressing and Parmesan. Fill the wrap with the salad, fold, and enjoy. *make sure you spread it evenly to avoid burning patches.

These might be one of my favorite taco recipes I’ve made lately. Tacos de papa filling mixed with taco-seasoned beef, stuffed into soft flour tortillas and air fried until golden and crispy.

My boys gobble these up!
