Quick and Easy Cheesy Egg and Sausage Breakfast Bombs

Rise and shine, busy breakfast people! If you’re on the hunt for a quick and easy morning meal that will save you time and satisfy hungry tummies, look no further than these delightful Cheesy Egg and Sausage Breakfast Bombs. Created especially for those hectic mornings when every second counts, these flavor-packed bombs are the ultimate solution to kickstart your day with minimal effort.

Ingredients and Instructions

  • 1 package of biscuit dough (8) – I like the buttermilk better than the flakey layer dough
  • 16oz turkey sausage – I like this one
  • 8 eggs
  • 1 cup shredded cheese – low fat or regular
  • salt and pepper
  1. Preheat and Prepare: Get your oven preheated to 350°F (190°C) and line a baking sheet with parchment paper.
  2. Cook: Cook your breakfast sausage links according to the package instructions.
  3. Scramble and Season: Crack your eggs into a bowl, scramble them up, and season with salt and pepper to taste.
  4. Cook and Set Aside: Heat a skillet, pour in your scrambled eggs, cook until just set, and then set them aside.
  5. Flatten and Fill: Open up your Pillsbury biscuits and carefully split each one in half making 16 rounds. Flatten each one, and place a spoonful of scrambled eggs, sausage, and shredded cheddar cheese mix on top.
  6. Seal and Bake: Fold the edges of the biscuit dough over the filling, pinching to seal, and form a ball. Place them seam-side down on your prepared baking sheet and bake for 20-25 minutes until golden brown and cooked through.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in —  meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Serve it on a bed of lettuce, in a wrap, or with crackers. Make sure you’re following @gina_gibson_cooks for more recipes. 

Ingredients:
2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.

Instructions:
Finely shred or mash the cooked chicken breast to your preferred texture. In a large bowl, combine the Greek yogurt, light mayonnaise, Dijon mustard, and lemon juice, mixing until smooth. Add the chicken, apple, celery, red onion, and parsley, and stir until everything is evenly coated. Season with salt and pepper, and mix in the walnuts if using. Cover and refrigerate for at least 30 minutes so the flavors meld, then serve chilled on lettuce, in a wrap, or with crackers.
