Healthy Burrito Bowl with Chipotle Sauce

June 14, 2022 by Gina +

One of my go-to's at our local Mexican joint is a burrito bowl. I switch off with the protein, but everything else is consistent. Lots of lettuce, a little cilantro rice, beans, and protein. And always their incredibly yummy special sauce. I've finally created a healthy chicken burrito bowl recipe at home using ground chicken and my secret sauce is a simple yet delicious chipotle

One Pan Baked Enchilada Skillet

May 24, 2022 by Gina +

I like to add hot sauce to lots of my savory meals so a spicy tuna melt just makes sense to

We love the simple egg and banana version but more recently, these Almond Flour Pancakes have been a real favorite. First off, they are incredibly light and delicious. But they are also carb friendly

Protein Peanut Butter Eggs

April 14, 2022 by Gina +

Hands down one of my favorite Easter candies growing up were Reece's peanut butter eggs. I had never thought to recreate them until this year because it seems like they are everywhere. My spin on them is instead of using flour or powdered sugar with the peanut butter, I use a protein powder which makes these a lot more blood sugar friendly but still just as delicious. These are my protein
