Salmon Cakes

January 10, 2019 by Gina +

We'd been taking a break from fish for a while, but after having an amazing salmon for Christmas, I decided to add it back occasionally. These salmon cakes are so easy and delicious plus they use whole, real ingredients and are not stuffed with filler and bread crumbs. The salmon could easily be subbed for another fish, like a white fish. [amd-zlrecipe-recipe:59]

Miso Bean Chili

December 20, 2018 by Gina +

Chili on a cold winter night is too fitting.  I keep this one simple with onion and beans, allowing the seasoning to really pull the flavor together.  Specifically miso, adds a subtle umami taste. This is one of my favorite vegan chili recipes because it's so easy but hearty and all the good flavor. Miso Bean Chili 1 small onion diced3 minced garlic cloves2 tbsp white miso paste2

Crispy Tofu Bowl

December 6, 2018 by Gina +

I love this bowl for a change up on my standard vegetable bowl.  The flavorful, crispy tofu is delicious paired with  citrus rice and nicely complimented with fresh radish slices.  The tofu takes a little work to press the water out, then marinate, but if you do this early, it all comes together quickly.  I try to press the tofu for at least 15 minutes so as to get out as much of the water as

Sweet Potato Stew

December 2, 2018 by Gina +

I'd say ninety percent of the meals we cook are made with clean ingredients, a simple process, and they come together quickly.  I just like food to be easy, delicious, and healthy.  Some of my favorites are curries, stews, and veggie bowls.  These check all the marks plus are multiple servings which is great for leftovers and lunches later in the week.  I'm all about keeping it simple.  This sweet

Deliciously Clean Pecan Pie

November 30, 2018 by Gina +

Want to know something crazy?  I had never had pecan pie until a few years back.  After my first taste I realized I had been missing out all those years.  I only gave it a try because it's my husband's absolute favorite and I trust his taste (hello, he married me lol).  Sadly, looking into typical ingredients, I learned it's filled with not great stuff, processed oils, loads of sugar, too much

A dinner you don’t want to miss. I cut a hole st A dinner you don’t want to miss.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in — meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it — no sliding eggs, no mess.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel
