Salsa Verde Chicken Soup

Happy New Year friends! We are just getting settled into the new year and I cannot believe it’s 2022. Seriously mind-blowing. Anyway, I simply love the beginning of the year. Fresh start. And setting intentions. Most of which usually don’t persist but I like the idea of it all. And one I think most of us set is to eat and live ‘healthier’. After the holidays I am so for that. This salsa verde crockpot soup was our first homecooked dinner of the year and if the rest of the year tastes as good as this, well 2022 is going to be a fantastic year!

This soup is flavor and protein-packed and doesn’t require a long list of ingredients. Totally my kind of meal is that it’s healthy and simple. A crockpot slow cooker dinner might take several hours, but they are the easiest meals. Toss everything in, walk away, and let cook, then enjoy! The best part too is this makes several good-sized bowls of soup, perfect to have throughout the week.

Ingredients needed for the Thai-Inspired Chicken Salad

  • Napa cabbage, shredded. You could also use a full bag of pre shredded cabbage
  • Carrots
  • Bell pepper – red is the best in this salad
  • Cilantro
  • Green onion
  • 2 cooked chicken breasts, shredded
    • For the Dressing
  • Peanut butter
  • Rice vinegar
  • Tamari
  • Garlic
  • Honey
  • Sesame oil
  • Ginger – fresh but dried works in a pinch
  • Lime

How to make Chicken Tacos

  1. To a crockpot you’ll add onion, garlic, and seasoning.
  2. You’ll pour in the broth and salsa then layer in the chicken.
  3. Cook on high for 4 hours or low for seven hours
  4. Once it’s all cooked you’ll remove and shred the chicken.
  5. Add the white beans and take a potato masher and give it a few mashes to help thicken the soup.
  6. Add back the chicken with the juice from a lime, chopped cilantro, and the cheese.

Tips for the Chicken Salad

  • I like a thicker soup so make sure to give the beans a good mash before you add back the chicken and remaining ingredients.
  • If the soup still isn’t thick enough, you can add a cornstarch and water mix, equal parts, to thicken it up. Start with a tablespoon of each.
  • I stir though a half cup of shredded cheese but you can skip this if you want to keep it dairy free. Alternatively, you can add more if you want it more cheesy. I like to top with a little cheese too so I keep it at a half cup.

Ingredients
  

For the Tacos
  • 2 Bell peppers, finely diced Recommend red and orange and using the food processor
  • 1 onion, finely diced Recommend using a food processor with the onion
  • 3 minced garlic cloves
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 lb ground chicken
  • 1 cup crushed tomatos
  • Salt & pepper
  • Tortillas
Suggested Toppings
  • Shredded lettuce
  • cheese
  • diced tomatoes and avocados
  • salsa or guacamole

Method
 

  1. Start by finely dicing bell peppers and onion. I find a food processor is an easy and quick way to do this.
  2. In a large skillet, heat a little oil and saute the onion and peppers for about 10 minutes until soft.
  3. Add the garlic and seasoing with 1tsp salt and 1/2 tsp pepper. Cook for a minute.
  4. Add the chicken and break it apart with a spatula. Cook for 10 minutes.
  5. Stir in crushed tomatoes. Let the filling cook for about 5 – 10 more minutes, until the chicken is cooked through.
  6. Prep the toppings and warm the tortillas while the chicken is cooking.
  7. Assemble tacos and enjoy!

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it โ€” no sliding eggs, no mess. 

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently โ€” this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel

Sweet apple, crunchy celery, and a lightened-up dressing come together for something thatโ€™s fresh, filling, and way better than the usual mayo-heavy version. Serve it on a bed of lettuce, in a wrap, or with crackers. Make sure youโ€™re following @gina_gibson_cooks for more recipes. 

Ingredients:
2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.

Instructions:
Finely shred or mash the cooked chicken breast to your preferred texture. In a large bowl, combine the Greek yogurt, light mayonnaise, Dijon mustard, and lemon juice, mixing until smooth. Add the chicken, apple, celery, red onion, and parsley, and stir until everything is evenly coated. Season with salt and pepper, and mix in the walnuts if using. Cover and refrigerate for at least 30 minutes so the flavors meld, then serve chilled on lettuce, in a wrap, or with crackers.
