Cheesy Pumpkin Lasagna Rollups

Savory cheesy pumpkin lasagna rolls should be on the top of fall comfort food for everyone. Lasagna is delicious, but there’s something more fun about individual rolls stuffed with pumpkin, and cheese, and layered with an alfredo sauce. It’s just the comfort food we need when coming into these colder months.

It wasn’t until this year that I decided to take my love for all things pumpkin from sweet to savory. I had no idea savory pumpkin recipes could be so good. Pumpkin really has a more mild, less sweet taste than some squash, like butternut. This makes it perfect to use for either sweet or savory recipes. When we add sweetener and fall spices, it’s obviously delicious. Hello, pumpkin bread. But when you mix it with a light cheese like cottage cheese or ricotta, it’s a great creamy addition to pasta.


Ingredients needed for the Pumpkin Lasagna Rolls

  • 1 box lasagna sheets
  • I 15oz container Good Culture cottage cheese
  • 1 can pumpkin puree
  • ยฝ tsp garlic powder
  • 1 tsp pumpkin spice
  • 1 jar alfredo sauce
  • 2 cups shredded mozzarella

How to Make the Pumpkin Lasagna Rolls

  • Boil lasagna noodles per box instructions.ย 
  • Lay flat after draining, do not put them on top of each other.
  • In a bowl, mix cottage cheese, pumpkin, garlic powder, pumpkin spice, pinch of salt.ย ย 
  • With all the sheets laid out, spoon a few tablespoons of filling onto each sheet.ย  12 sheets, there will be extra in case of any break.ย 
  • Once itโ€™s all evenly spooned, spread it out on each sheet.ย  I spoon before spreading to make sure each gets an even amount.ย 
  • Once itโ€™s spread, sprinkle 1 cup of mozzarella over all the pumpkin filling.ย  Gently roll.ย 
  • In a large cast iron or baking dish spread 1 cup alfredo.ย  Place each lasagna roll over the sauce.ย 
  • Top with another ยฝ cup to 1 cup sauce and top with mozzarella.ย  Bake at 350 for 30 minutes.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in โ€”  meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it โ€” no sliding eggs, no mess. 

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently โ€” this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel

Buttery, golden sourdough stuffed with melty brie, sharp white cheddar, jammy caramelized onions, and crisp apple slices. Itโ€™s creamy, sweet, tangy, and toasted to perfection.

Use sourdough or whatever bread you love, and make extra caramelized onions โ€” youโ€™ll want them again tomorrow.

This is exactly the kind of dinner I want during the weekโ€”crispy chicken, plenty of sauce, and melted cheese, without making dinner more complicated than it needs to be.

Sweet apple, crunchy celery, and a lightened-up dressing come together for something thatโ€™s fresh, filling, and way better than the usual mayo-heavy version. Serve it on a bed of lettuce, in a wrap, or with crackers. Make sure youโ€™re following @gina_gibson_cooks for more recipes. 

Ingredients:
2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.

Instructions:
Finely shred or mash the cooked chicken breast to your preferred texture. In a large bowl, combine the Greek yogurt, light mayonnaise, Dijon mustard, and lemon juice, mixing until smooth. Add the chicken, apple, celery, red onion, and parsley, and stir until everything is evenly coated. Season with salt and pepper, and mix in the walnuts if using. Cover and refrigerate for at least 30 minutes so the flavors meld, then serve chilled on lettuce, in a wrap, or with crackers.
